London: Settling In

We arrived to London safely with all our checked luggage. Hopefully our air and ship freight will arrive in the near future. :)

Have a good one mate...

Today I am writing a sad post, I'm departing a country that I love...

It has been more than 8 years, I arrived as a humble Portuguese and I will depart as a proud Portuguese-Australian: I have studied and was a tutor in one of the best universities in the world, the University of Sydney; I worked with aboriginal communities in Central Australia; I was part in numerous interesting consultancy projects with 2 Matter Consulting; I adventured through national parks and remote camping; I have a Sydney beach that I call my own (Coogee of course!), I embraced the mateship and made friends along the way; and I became an Aussie citizen...

Thank you for everything. Thank you bus driver for the warm welcoming on the first day that I arrived. Thank you sneaky Kangaroo for not jumping in front of my vehicle when I was going to my national park adventures. Thank you Leichardt, Annandale but more importantly Glebe for giving me a place to stay. Thank you for not biting me small Coogee shark. Thank you Fish Market for so many delicious treats. Thank you Darling Harbor for so many fireworks. Thank you Sydney Bridge for such lovely views. Thank you. Thank you. Thank you...

Peruvian cuisine is trending, and one particular dish has caught the attention of many: a fish based dish called ceviche. Ceviche is not only Peruvian but the dish is popular throughout Latin America and the Philippines, in countries that at some point in time were under Spanish influence. The idea is the same, fresh raw fish cooked in lime juice. Peru however has embraced ceviche as a national dish, and the Japanese migrants that came to Peru in late 1800s contributed to what is now Peruvian ceviche, fresh raw fish barely cooked in lime juice.
